I do need to test the yeast, but I can promise you it is AT LEAST a full year past it's best-before date, and I keep it in the fridge regardless lol. I forgot to check it last night. I also normally rise my pans by putting them on the stove, since the pilot light(s?) give off enough warmth, and I didn't do that this time. Maybe not enough honey? Too much salt, or putting the yeast in with the salt? I have more time this week, so further experiments shall commence!
