Turkeys are tricky bastards, you have to have the meat thermometer in there right to make sure you don't overcook it. We butter the fuck out of that bird, then salt and pepper it, put in stuffing, then use one of the roaster bag things because it's way, way easier to make the bird turn out ok if you use one of those.

I love making turkeys and I have my dad's magic stuffing recipe somewhere. Someone has to inherit the good ol' family holiday recipes.
