Whew! That's a lot! Some unsolicited yeast advice (feel free to ignore!): you can test the yeast by putting some in some warm water with a bit of sugar. After about 10 minutes it should be foamy/cloudy. You can also extend the life of your yeast by storing it in the freezer.
