Jan. 10th, 2024 09:04 amMade loaded potato soup last night because winter arrived with a vengeance and hot damn it was delicious. I'd made it before as-written, this time I made some changes. I did not use milk at all and replaced with broth, of which I had beef bouillon on hand. Did not fry up some bacon bc I don't have any. Waited until the potatoes were cooked through to add a cornstarch slurry to thicken. Used maybe a quarter to a third of a cup of sour cream as it was all I had left, no appreciable taste. Only salt and pepper to season bc I was too lazy to get the paprika. Topped with old cheddar, bacon bits and sliced green onion. It was so good I had a second bowl. I am REALLY looking forward to leftovers for lunch today!
Doctor Who scarf knitting was so close to being done, I can't believe (yes I can) it took me THIS LONG to just fuckin' do it. Even with cooking/eating dinner for an hour in the middle of the evening I was finished before 10pm. It's a very polite amount of scarf, perfect for one loop under a coat. All I need to do now is weave in 8 million ends and put on the fringe. And then wash it, because it too was a victim of the flood, before allowing it to come in contact with someone else's face. Unsure if I will toss these leftover balls of yarn yet, there's probably enough for yet another scarf but...
